Le domaine: Fille de la Bourgogne, Clotilde DAVENNE a grandi à la campagne, au pied du Morvan. Cette enfance dans la nature forge son approche sensible du monde. Tout y est odeurs, saveurs, couleurs, dans un mélange de sensations chaque jour renouvelé.
Le nez en l’air et les papilles aux aguets, elle apprend les senteurs végétales : tilleul, acacia, menthe, herbes froissées, rosés des prés, sous-bois humides … 
Il y a aussi celles du jardin : artichauts, petits pois, haricots, qu’elle croquait souvent sur place.  
Jeux au verger : cerises, prunes, framboises et les noix, jusqu’au retour à la cuisine : confitures, fromage blanc, gâteaux… Couches olfactives qui font gourmandise. Plus tard, Clotilde souhaite mettre à profit ce potentiel sensitif : faire du vin, un métier. C’est ainsi qu’elle décide de suivre des études d’œnologie. 

Jeune diplômée, elle débute dans les rouges du Beaujolais, découvre les vignobles effervescents de Californie, avant de revenir acclimater les blancs de Bourgogne à Chablis. Chef de cave, elle travaille à l’expression des terroirs à travers les vins qu’elle élabore depuis 1989.
