Œil : Une jolie couleur dorée, avec un bord topaze. 

Nez : Un nez puissant, aux arômes de fruits secs, notes de bois et délicieuses notes de chocolat.

Bouche : En bouche, il est doux et velouté. Un vin de grande intensité, aux tanins puissants et à l’élégance somptueuse. Une finale longue et engageante.

Le domaine: La maison de porto Cálem a été fondée par António Alves Cálem en 1859 et est une marque des plus réputées du Portugal. Le premier millésime produit par Porto Cálem était le millésime 1870, et les premiers prix comprenaient des médailles obtenues à Bordeaux, à Marseille et à Bruxelles en 1897.

Les vignobles où sont cultivés les raisins sont situés le long du fleuve Douro et couvrent 40 000 hectares. Après le processus de vinification dans le Douro, le vieillissement des vins de Porto Cálem se déroule dans des fûts de chênes dans les caves de l'entreprise à Vila Nova de Gaia, situé sur la rive opposée de l'historique "Ribeira" de la ville de Porto.

Les caves de Porto Cálem ont été rénovées en 2017 et disposent aujourd'hui d'un espace privilégié pour le tourisme œnologique.

 Sa texture veloutée et ses arômes uniques se marient remarquablement bien avec du foie gras, des plats avec des fruits secs, et des desserts tels que les brownies au caramel, le chocolat et les fromages de chèvre.

An icon of the style of the Maison, Pale & Dry XO is made exclusively from eaux-de-vie of Grande Champagne, matured in 350-litre barrels of old Limousin oak, in our centuries-old cellars on the banks of the Charente, from Vinade to Jarnac. The progressive, meticulous reduction of the cognac’s ABV to 42% allows for the perfect balance between power and natural sweetness, emblematic of the Pale & Dry XO.

Tasting Notes :

Appearance : The hue is pale and subtle. A soft amber color, with delightful yellow tones.

Nose : Particularly delicate, notes of vanilla and apricot, enveloped by fresh notes of passion fruit, orange zest and almond.

Palate : Vanilla which blends into apricot aromas, highlighted by nuances of spices and ginger.

Finish: Intense and persistent, a perfectly balanced final touch of this rare cognac.

The mashbill for Woodford Reserve features a high percentage of rye: 72% corn, 18% rye and 10% malt. The whiskey is also unusual for being triple distilled and having the lowest proof upon entering the barrel where it matures for at least six years. A must have Kentucky bourbon. Makes a wonderful Old-Fashioned cocktail!

Tasting Notes: 

Appearance: Clean, brilliant honey amber. 

Nose: Heavy with rich dried fruit, hints of mint and oranges covered with a dusting of cocoa. Faint vanilla and tobacco spice.

Palate : Rich, chewy, rounded and smooth, with complex citrus, cinnamon and cocoa. Toffee, caramel, chocolate and spice notes abound.

Finish : Silky smooth, almost creamy at first with a long, warm satisfying tail.
