Proefnotitie: De Chinon Les Granges is een wijn die komt van een 6 ha groot perceel met een zeer complexe bodemstructuur, de bovenste lagen bestaan uit zand en kiezel en de ondergrond uit klak en silex. Deze Chinon is uiteraard gemaakt van 100% Cabernet Franc, de cépage die het zo goed doet op erg minerale grond. De kleur van deze wijn is schitterend kersen rood met een mooie fonkeling, de neus is fris en fruitig en heeft toetsen van vers gesneden Paprika’s. De aanzet in de mond is delicaat en zeer elegant met toetsen van rood fruit zoals aardbei en framboos ondersteund door een pittige frisheid en mooie minerale toetsen.

Het huis: Baudry is een topwijnbouwer uit de Chinon die met de kwaliteit van zijn wijnen vriend en vijand verbaast. De Loire is een vrij moeilijke streek voor rode wijn, maar wat Bernard Baudry voortbrengt is buitengewoon klasse. Soms zoeken we de warmte en weelderigheid van het zuiden, soms willen we de koelheid en de klaarheid van het noorden. De rode Loire wijnen belichamen die koelheid. Cabernet Franc rijpt vroeger dan Cabernet Sauvignon en past zich dan ook beter aan in koudere klimaten. Toch wordt ook deze druif niet moeiteloos rijp in de Loire. Daarom staat Cabernet Franc vaak voor groene, vegetale, schrale wijnen. Alle inzet is nodig in de wijngaard om de druiven mooi rijp te krijgen.
Op de beste terroirs van Chinon wordt kracht en rijpheid aangevuld met elegantie en finesse. Weinigen hebben dat zo goed begrepen als vader en zoon Baudry. Aromatische intensiteit, raffinement van tannines, uiterst gedoseerd houtgebruik; uit alles spreekt het superieure stijlgevoel van de wijnmakers. Perfect rijpe druiven maar in een koele stijl gebracht; beheerste alcohol, fijne zuren en gepolijste maar gestructureerde tannines.

Ideaal bij gevogelte en wit vlees.

Koval Single Barrel Bourbon Chicago 47%

Koval Distillery, established in 2008, is located in the North End of Chicago. They are a 100% grain-to-bottle operation that sources their grains from an organic co-op in the Midwest. Their bourbon mash-bill consists of two grains: corn and millet. This is aged less than four years in 30-gallon, new charred barrels. All Koval's whiskeys are bottled as single-barrel so slight variations will occur.

Eagle Rare Single Barrel 10 years old Bourbon Kentucky 46%

Eagle Rare Straight Bourbon is one of the flagship products of the Buffalo Trace collection. It is made from 10 year old bourbon aged at the Kentucky distillery. The barrels are hand selected for quality and consistency before bottling.

Hudson Baby Bourbon New York 46%

The first whiskey to be produced by Tuthilltown Spirits (as such, their 'baby'), this 'bourbon' is made from 100% corn... yep, 100%. General wisdom would call this a corn whiskey, but that's another discussion for another day. Aged for only 3 months in 3 gallon barrels, this whiskey lives up to it's name as a baby.

Buffalo Trace Bourbon Kentucky 45%

In 1999. Master Distiller, Elmer T. Lee, came out of retirement for the creation of the Buffalo Trace Bourbon which was released later that same year. The whiskey is comprised of a low-rye mashbill providing for a softer, sweeter expression and is bottled at 90 proof.

Basil Hayden Bourbon Kentucky 40%

One of the four bourbons in the Jim Beam, Small Batch Collection and bottled at a much lighter 80 proof, Basil Hayden is an easy drinking, well balanced whiskey.Beam Global recreated Basil Hayden, Sr's original mash bill when producing this bourbon as Hayden is credited with increasing the percentage of rye in the mash

Elmer T Lee Bourbon Kentucky 45%

This single-barrel expression is named in honor of Elmer T. Lee, former Master Distiller of Buffalo Trace Distillery and was their Ambassador for years after his retirement in 1985. Just before his retirement, he introduced the world to single-barrel bourbon with the release of Blanton's Single barrel named in honor of the gentleman who hired him back in 1949
