Proefnotitie:

Uitzicht: Helder, intens robijnrood met een paarse glans.

Mond: Sappig, verfrissend en elegant. De levendige zuren balanceren perfect met een goede concentratie van rood fruit, verfijnde tannines en een ziltige, minerale afdronk.

Het Huis:

Een baken van terroir en passie in Barbaresco.
Azienda Agricola Sottimano, gelegen in Neive, werd eind jaren '60 opgericht door Rino Sottimano. Vandaag de dag runt zijn zoon Andrea het domein met dezelfde compromisloze visie: het maken van pure, terroir-gedriven wijnen via biologische wijnbouw en minimale interventie. Er wordt uitsluitend gewerkt met inheemse gisten en de wijnen worden nooit geklaard of gefilterd. Hoewel de familie wereldberoemd is om hun monumentale Barbaresco's, koesteren ze met de 'Maté' een van de best bewaarde geheimen van de regio.

De 'Maté' Wijngaard:

Unieke expressie van een vergeten druif.
De 'Maté' is afkomstig van een klein, specifiek perceel van slechts 1,1 à 1,2 hectare in Treiso, aangeplant eind jaren '80 op zo'n 400 meter hoogte. Waar Brachetto in Piemonte traditioneel wordt gebruikt voor zoete, mousserende wijnen, bewijst Sottimano hier het absolute tegendeel. De meer dan 40 jaar oude wijnstokken leveren een droge, stille rode wijn op met een ongekende complexiteit. De wijn ondergaat een schilinweking van ongeveer 20 dagen en rijpt daarna circa 8 maanden uitsluitend in roestvrijstalen tanks om de pure, florale fruitexpressie maximaal te bewaren.

Serveer deze rode wijn licht gekoeld (12-14°C). Dankzij zijn unieke florale en kruidige karakter vormt hij een verrassende en schitterende combinatie met:

Geroosterde eendenborst met een reductie van framboos en steranijs: Het rode fruit en de kruidigheid van de wijn snijden prachtig door het vette karakter van de eend.

Zacht gegaarde kalfswangen in Marokkaanse tajine met abrikozen en amandelen: De aromatische tonen van de Brachetto liften de zoet-kruidige smaken van de tajine naar een hoger niveau.
